Apple and Ice Cider Desert Soup

Ingredients

  • 6 large apples
  • 1 litre (4 cups) water
  • 175 ml (3/4 cup) brown sugar
  • 2.5 ml (1/2 tsp.) cinnamon
  • 1.25 ml (1/4 tsp.) nutmeg
  • 125 ml (1/2 cup) lemon juice
  • 250 ml (1cup) whipping cream
  • 150 ml (2/3 cup) Domaine Pinnacle Ice Cider

Preparation

Peel, core and slice 5 of the 6 apples and place in a saucepan with water. Cook until soft. Puree in food processor or blender to make applesauce. Add sugar, cinnamon and nutmeg and stir to blend. Peel and core remaining apple, shred and mix with lemon juice. Stir into applesauce and chill. To serve, blend cream and Ice Cider into applesauce and serve.
