It just so happens that in its aromatic profile, we find the same dominant aromatic compounds as in maple, curry, apple, and…marshmallow! Yes, marshmallow and ice cider! Who knew! Once we established this analysis, all we needed to do was to offer you these two heavenly butter recipes. Thought of and created for the enhancement of the cheese course, these butters also simultaneously create strong harmonic links with Domaine Pinnacle Ice Cider. Have fun and serve one of these two butters, or both, with firm cheeses, goat cheese and blue cheese. Divine!

Ingredients
1 lb (approx. 4 apples) Golden apples, peeled and cubed
1/4 cup (50 g) sugar
3/4 cup (150 ml) butter
1 tsp (5 ml) curry powder
1/3 cup (75 ml) maple syrup
Preparation
1. In a large heat proof glass bowl, place cubed apples, sugar and maple syrup, mix well.
2. Place bowl in microwave oven and cook on high for 20 minutes. Check apple tenderness to make sure they are cooked evenly.
3. Place cooked apples in a blender then add butter and curry powder. Mix until the texture is silky smooth.
4. Pour the apple butter into glass jars and keep refrigerated.
